Hi! I’m Noel. I love to eat and believe that giving people food is an expression of care, affection, and love. Good delicious food is fantastic, especially if I can eat it without any trouble. I have several food issues, like allergies, digestion difficulties, and acid reflux, which means I cannot eat dairy, high fructose corn syrup, wheat, most gluten, and can only have small amounts of nitrate (preservatives), sulfa (like egg yolks, preservatives, cruciferous vegetable), meat (fish is okay), acid, alkali, oil, bread (including gluten-free), and hot spices. My food choices are limited, so I make the best with what I can. Thankfully, I have found many dietary exceptions in my quest for Noel-friendly ingredients. I love to make all sorts of tasty goodies, and I enjoy experimenting in the kitchen and exploring new foods. I also convert recipes all the time in efforts to maintain a healthy diet.
I have taste tested all sorts of ingredients. I love trying new things, and I figure, I can I only truly know if I like something if try it. I have found a deep appreciation for many ethnic cuisines, like Peruvian, Brazilian, Persian, French, Italian, Turkish, Japanese, Indian, and many others. For the most part, I just have to make sure to avoid butter, cheese, cream, bread, and soy sauce, which got easier after a while. To be honest, navigating American, British, and German restaurant menus can be the most difficult, and I do give into temptation sometimes only to pay for it later, which is why it is a good thing I bring digestive aids and anti-histamines with me everywhere.
From time to time, I will include strange ingredients, but I include information about them, like where they are from, alternative names, why I included them, as well as possible substitutions. I also like to support local Bay Area businesses and farmers, so I understand it might be difficult to obtain the same ingredients sometimes.
